Spicy Coconut Butternut Squash Soup
**MAY 2026 UPDATE! This soup was previously a vegan soup. However, the vegan red curry paste we used was discontinued and we have not been able to find a replacement. We had to switch to a red curry paste with shrimp paste, making it no longer safe for those with shellfish allergies or vegans.**
The sweetness of the butternut squash balances the spiciness of the red curry paste for a warming and grounding soup. Creamy and comforting, this spicy coconut butternut squash soup is a bright burst of flavor on a cold day that will surely awaken your senses to the magic of life happening all around you.
Try topping it with a fresh squeeze of lime, cilantro, and chili crunch. Serve it over rice or with a stir fry or salad.
Thaw and reheat on stove. Add a little meat stock, broth, or water to bring food back to life.
